So, this post is long overdue...but here it is! This is the wedding cake I made for my cousin Amy and Donny's wedding. It was a lot of fun to create and decorate.

A little bit of summer.

So, I realize that all I've been posting lately is pictures of my cakes, but it's my lastest addiction, so...here's another one! I made this one for a baby shower for my friend Brier. She lives in Saskatchewan and is home visiting for a couple weeks, so it was great to be able to do this for her.

So, I have some more baking adventures to share with you. First of all, I made a pie from scratch. I've always wanted to try it, so i thought what better time then when there's fresh strawberries and rhubarb!

Secondly, I made a cake for a friend of mine's Grandparents 50th Anniversary Party. She asked me if I'd be interested, and I thought it was a great opportunity, so here's what I came up with.

Other than baking, things are going good with me. Work is good and definitely keeps me busy. The weather here is perfect right now, not too humid, but warm! I was at a friends cottage last weekend. I don't have any other summer holidays planned except for a couple weekend getaways. Happy Summer!!

Claire's Birthday Cake

So, I decided it was probably time to update this thing. And again...I don't know how many people still check this, but to those who are reading this right now...thanks for having faith in me that someday I would update it!!

Erica's posts with all her cakes inspired me to try my hand at cake decorating...so here is a picture of a cake i made for my friends baby shower. The shower was pink themed.

I also made some baby themed cookies.

I think my dream job would be to open up my own bakery! Someday, maybe after I've been a nurse for a few years, I just might do this!

My job is going really well. I love working in the OR, and the people I work with, so I have no complaints. I have another year on my contract, so for now I'm content.

I've joined a running club for the spring with 3 of my friends, and surprisingly it's going quite well. We decided that we needed something to do to get us into shape and just to be healthy. So, we meet 3 times a week and run with a big group of people. It's nice to get out and be a part of something while getting some exercise at the same time.

Well, that's all for now. My wonderful roommate is cooking supper for us and it smells so good...so I think I'll go see if she needs help...or if it's ready to eat yet!!

I figured I better update this while I'm still on Christmas holidays! I had 2 weeks off work and it's been fantastic. The OR shuts down for 2 weeks over Christmas, open only for emergencies, so I had to work 2 shifts (dec. 22nd and 23rd) and I've been off since then. I go back on January 7th. I'm kinda looking forward to it, but mostly I'd just love to keep being on holidays. But...I know that's not reality...so I will live in my reality and not complain!

I spent almost 1 week with Corrie, Brent and Claire which was a lot of fun. Claire really is a funny kid, and keeps us all very entertained. She is talking a lot and is always on the go.

Other than that, not much else is new with me. The apartment is good...Ruffles hasn't done anything else for me to report on, so that's good. I hope everyones Christmas and New Years was fantastic...love you all!!

Judging from the number of comments from my last post, I know that people still read my blog...and so I am encouraged to write another post! I will tell you about the ghost we think lives in our apartment.
There have been a couple of weird things that have happened and so we like to joke that we have a ghost. It's become our little joke, but here are a few things he has done to us:

1. He stole one of our kitchen knives...one of the big ones that goes in the wood block thing. We have no idea where it went.

2. He kept hiding Jocelyns vitamins. One day she said to me 'Nic...can you stop putting my pills
in the drawer, i forget to take them when you do that'...and to which i replied 'I haven't touched your pills'..how they kept getting in the drawer??...i have no idea.

3. He turned on the microwave in the middle of the night. I was awoken one night at about 2am to the sound of the microwave running, and i thought jocelyn must be heating something up...so i went to the kitchen, but no jocelyn and there was nothing in the microwave but there was 5 minutes and 16 seconds counting down...hmmm...weird?? yes, i think so.

So, that's my story.

Well, for those people out there who still faithfully check my blog (and I love you all!!)...this is for you! I've been meaning to post pictures of my apartment for quite some time now, and today is the day. I just recently got a new computer, so I am able to do this now (not that i couldn't before...but that is my excuse!)

A place to call my own!!

So, again...it's been awhile. I apologize. But I just wanted to let all of you who don't have facebook know that I have found a new place to live! No, I wasn't kicked out of my house. My friend Jocelyn and I have been looking for an apartment for about a month now and haven't had any luck until Saturday. We found the most perfect place for us and we just love it! It's in St. Catharines, and the top floor of a house. It's pretty spacious, and has 2 bedrooms, kitchen, bathroom, living room, dining room and a balcony. So, we're pretty pumped about it. We will be moving out on August 1...which is so soon! SoOo...now I have to start packing my room and decide what to take, what to throw away. It's a very exciting time, and we can't wait!!


My course is going well. It's a lot to learn and my brain feels very overloaded right now, but it's very interesting. It keeps me busy, that's for sure!

Change of plans...

Hello my loyal blog readers...I hope you are all doing well and enjoying the summer!! I just wanted to let you all know about a change of plans with my upcoming job. I was recently offered a position to attend training to become an OR (operating room) nurse, with guaranteed full time work after that. It is fully paid for and I'm paid to take the course, with the understanding that I will commit 2 years to work after the course is over. So....I took it! Which means, I'm heading back to school for 2 months starting July 3rd and then I'll start at a different hospital, but still part of the Niagara Health System. I'm super excited about this, as it is an amazing opportunity that doesn't happen everyday! I would be working Mon-Fri, days, which is what I've always wanted, but thought it would take me a few years to get there.

So...those are my new plans...I was only given 1 day to make this quick decision, but I know it's the right one and feel 100% at peace about it.

Finally!!!

So, after a long and tiring 8 hour day of writing my exam...it is finally over!! I feel great! The exam was ok. I think...it was multiple choice and short answer, so you never really know with those types of exams, but I've done what I can do, so now I just have to wait until I get my exam results. I'm just so happy to be done!
And so, tomorrow is my graduation, which is very exciting. I can't believe after four long years, my university career has come to an end. And, I will receive a Bachelor of Science in Nursing...crazy!! And then as soon as my graduation is over, I'm whisking off to Alberta to go to my cousin erica's wedding...which is also crazy but I'm super-excited to see all the fam again. Then after a few days in Alberta, I'm off to Winnipeg to see my friend Kristy. So, I have a nice little vacation before I start working.

I figured that I better post something now because I only have one more day in May...and I seem to have a 'one post per month' pattern...so, here it is! I don't really have that much to say right now...I've just been studying for my RN exam for the past month (which is in 6 days!!). I really can't wait to write it and be done with it because I'm getting tired of studying all day every day. I'll let you all know how my exam goes once I'm done!!

Lazy Sunday Afternoon.

Brier decided to plan a surprise visit and came all the way from Thunder Bay to see family and friends here. It was a lovely surprise. We (Brier, Robyn and myself) spent the majority of our Sunday afternoon being lazy. But isn't that what Sunday afternoons are for??

Also, for those I haven't told yet, I got a job!! I'll be working for the Niagara Health System, at the Welland Hospital, on the surgical ward (post-operative)...and I'm very excited about it. I'll be starting around the middle of June sometime. So, I'm looking forward to it and I'm nervous about it, but I guess that's normal!!

Reunion!!!

I always love reconnecting with friends I haven't seen in years! And this past week, I had that opportunity. My friend Lindie who I went to Capernwray with way back in 2001/2002 came to visit me for 4 wonderful days. I hadn't seen her for 3 years, but it felt like no time had passed, which I love because that is a sign of true friendship!

Lindie also knows Jocelyn from Capernwray in Quebec, so we hung out a few times and had a great time laughing and remembering funny stories.

Done and Done!!

Hello my loyal blog readers!! Just wanted to let you all know that I am officially done school! Forever!! My university career has come to an end and now it's time for bigger and better things (and making some money too!!).

Just Because...

Update...it's about time!!

Well, my university career is almost finished!! I have one more week of classes and one more shift at my placement and then I'm done. Then I have 2 months to study and I write my RN exam on June 6th. I can't wait! I've been in the process of applying for jobs and deciding where I want to work. I still don't know...but I had an interview for one hospital, on a surgical ward last week and it went well, so we'll see what happens with that. It's so hard to know where to work or what area to work in, and I know that I can always go somewhere else if I don't like it, but it's still a hard decision.
For those who don't know, I am no longer going to Romania. I decided that it wasn't the right time for me to go. I will work for a year and hopefully go next year sometime. It's still my dream and I will get there, but it just wasn't right for me this summer.
So, who knows what the future holds. It's exciting to be done this chapter of my life and to be moving on to something new. It's scary too, but I'm excited to see how everything unfolds!!

The Sun is Shining!!

Who wants to be inside when the sun is shining, the snow is melting and it's a beautiful day outside?? Not me...and although I had plenty to do (homework), I jumped at the opportunity to go for a hike with my friend Jocelyn. We set out for the Niagara Gorge, and after a few wrong turns, we made it and had a fabulous hike!

I haven't had that much exercise in a long time and I forgot how good it feels to be active! I was definitley tired when we finsihed, but it was worth it! I can't wait until the snow is completely gone and the sun is shining everyday!

Oh, to be a KID again!!

First of all, I'd like to draw to your attention that I'm posting two times in February! This is a big step for me...so hopefully you all enjoy it!!

This weekend, Hillary came to visit me from Toronto and we had a great time. Whenever we get together, we are just like two little kids...always having fun whatever we're doing and always laughing. So, we decided to play in the snow since my backyard was full of it. We got all bundled up, grabbed our cameras and headed out into the backyard.
